Frozen Yogurt Blueberries

This snack is filled with important nutrients, including antioxidants. Just dip blueberries into plain Greek yogurt one at a time, then place them on a baking sheet with parchment paper. Add some honey for extra flavor. Place the baking sheet in the freezer for about an hour for a tasty and sweet treat that’s good for you.

No-Bake Granola Bars

This chewy treat is packed with delicious ingredients that are also filled with fiber and other nutrients. Combine quick-cooking oats, whole grain cereal, unsweetened shredded coconut, unsalted pistachios, vanilla extract and kosher salt in a bowl. Put peanut butter, dates and honey in a saucepan, then cook for a few minutes until the mixture melts. Pour the mixture on the oat mixture, then stir it. Spread it into a baking pan, then put it in the freezer for about 10 minutes.

Thai Sesame Edamame

Edamame has plenty of nutrients, including protein, iron and fiber. Cook edamame in a skillet for about two minutes, then add dark sesame oil, light brown sugar, vinegar, pepper and salt. Cook for a few more minutes until the other ingredients coat the edamame. Put cooked edamame in a bowl, then cover with sesame seeds.

Zesty Green Dip

This dip offers a nutritious way to enjoy whole grain crackers. Combine watercress, basil, parsley, green onions, Greek yogurt, olive oil, vinegar, anchovy paste, black pepper, salt and red pepper in a food processor for about 10 minutes. Place in a bowl and chill for about eight hours.

Honey Glazed Almonds

This snack adds a tasty kick to almonds, which contain several nutrients, including protein and vitamin E. Cook almonds until they’re lightly toasted, then add sugar, honey, chile powder, cumin and salt. Cook for a couple more minutes, then place on a baking sheet.

4 Tasty Mojito Recipes to Try in Your Apartment

Mojito in GlassDo you enjoy the outdoors near Regatta at Lake Lynn—perhaps at one of our two pools or the lakeshore? Or maybe you enjoy watching Fido play in the dog park? You probably want a refreshing drink, and one of the best options is the classic mojito. Here are four twists on the recipe:


For this recipe, you will need a muddler. Crush ten mint leaves and a lime wedge into a glass, then add two more and sugar. Fill the glass with ice, pour in 1 & 1/2 ounces of white rum and then top off with club soda. Do not strain the mint and lime mixture because mojitos should be “muddy.” Mojitos should always be made with fresh mint, not dried. The recipe says white sugar, but raw is better.


Whether it’s Christmas time or springtime in North Carolina, the weather can be warm enough to want a cold drink, so how about a cranberry mojito. This recipe calls for raw sugar. Muddle boiled cranberries with the lime and add a splash of cranberry and Sprite before topping off with soda water. Perfect for unseasonable Christmas warmth or for spring and summer.


Fresh cherries, when in season, speak to summer. This recipe calls for chocolate mint rather than regular. It’s made in a different way, but you can probably experiment—the key element is to use fresh cherries. For a particularly North Carolina variant, use white rum and then add a splash of Cheerwine because nothing says North Carolina more!

Summer in the south means sweet tea. How about improving the sweet tea. No, this isn’t made by adding rum to your iced tea. You actually freeze the tea and use it as ice cubes! This also includes a way of making mint-lime simple syrup, which you could use as a way of muddling your mint ahead of time, especially if you’re going to be making a lot of this.

4 Spring Recipes to Prepare

Pasta With VeggiesNow that it’s spring, you’ll be able to make some great spring recipes on the balcony at your Raleigh apartment. Enjoy the view from your balcony or patio while savoring chicken or lamb dishes, and finish it off with your favorite wine and strawberry shortcake.

Roast Chicken With Spring Vegetables


1 chicken quarter per serving, skin on and bone in

Salt and pepper

½ lemon

Olive oil

Baby potatoes



Baby carrots

Chopped fresh dill


Preheat the oven or grill to 500 degrees Fahrenheit. Season the chicken with the salt and pepper, and then place it skin up on a baking sheet. Squeeze the lemon over the chicken and then drizzle about a teaspoon of oil over the chicken. Roast the chicken for 15 minutes. While roasting, cut the potatoes and radishes in half. Cut the scallions into thirds. Toss the vegetables and about a tablespoon of oil together. Season the vegetables with salt and pepper. Remove the chicken from the oven. If you are using a grill, line the grill with a foil pan. Scatter the vegetables around the chicken. Roast the vegetables and chicken for about 20 minutes. The chicken should have a golden color. Make sure it is cooked through. Remove and squeeze more lemon over the chicken and vegetables. Sprinkle with dill and serve.

Grilled Lamb Chops


2 large garlic cloves, chopped

1 tbs. Fresh rosemary leaves

1 tsp. Fresh thyme leaves

Cayenne pepper to taste

Coarse sea salt

2 tbs. Extra-virgin olive oil

6 lamb chops, about ¾ inch thick


Pulse the spices in a food processor until they are combined. Pour in the olive oil and pulse the mixture into a paste. Rub the paste on both sides of the lamb chops. Marinate in the refrigerator for at least 1 hour. About 20 minutes before you are ready to cook, remove the chops from the fridge and let them come to room temperature.

Heat a grill pan over high heat until it is almost smoking or heat the grill up. Sear the chops for about 2 minutes and then flip them over. Cook for another 3 minutes for medium-rare and 3 ½ minutes for medium.

Pasta and Veggies in Garlic Sauce


½ pound uncooked Fettuccine

Carrots, julienned


Red bell pepper, julienned

White mushrooms

Zucchini, julienned

Summer squash, julienned



Salt and pepper

Parmesan and Romano Cheese mix, grated


Boil the pasta until al dente. Melt 2 tablespoons butter in a saute pan. Add 2 teaspoons garlic and the vegetables. Sauté the vegetables until they are hot, yet still crispy. Drain the pasta. Melt ¼ cup butter and mix with 1 tablespoon garlic. Toss the veggies, pasta and garlic butter together. Season with salt and pepper. Top with Parmesan and Romano grated cheeses. (Note: If you are not a garlic fiend, use less garlic in the melted butter).

Strawberry Shortcake

Hull and wash ½ cup strawberries per person. Mix the berries with 2 tablespoons sugar and let them marinate in the fridge for at least 30 minutes to allow juices to develop. Serve the berries over your favorite angel cake, sponge cake or biscuits with whipped cream.
