Pumpkin Snickerdoodles

These delicious cookies are a great treat to have with a warm cup of coffee on chilly fall evenings. To make them, preheat your oven to 375 degrees Fahrenheit and mix baking soda, nutmeg, cream of tartar, flour and salt in a bowl. In a separate bowl, mix sugar, butter and canned pumpkin puree, then add an egg and vanilla to it. Add the flour mix, then stir it all together for a couple of minutes. In another bowl, mix sanding sugar, allspice and cinnamon together. Coat rolls of dough with the sugar mixture, then bake for 10 to 12 minutes.

Pumpkin Cannoli

These sweet desserts are ideal to have after a pasta dinner, but you can also enjoy them after any meal. To make these, blend pumpkin puree and mascarpone cheese on medium speed. Add whipping cream, sugar, vanilla, cinnamon and nutmeg, then blend on medium speed. Scrape this mixture into a piping bag, then use it to fill up cannoli shells. Dip each end of the cannoli shells into mini chocolate chips, then sprinkle with powdered sugar. Since this is a no-bake recipe, your cannoli dessert will be all ready to eat as soon as you’re done.

Pumpkin S’mores Cups

These treats put a seasonal twist on traditional peanut butter cups, and they’re simple to make for a quick dessert. To make them, fill the bottoms of cupcake liners with melted chocolate and place some around the sides of the liners. Put these in the fridge for five minutes, so they’ll get harder. Mix pumpkin puree, graham cracker crumbs and marshmallow fluff in a bowl. Add two tablespoons of the filling into each cupcake liner, then cover with chocolate. Chill these in the fridge for about ten minutes, then enjoy your dessert.

Strawberry SmoothieWhat better way is there to cool down and enjoy the last days of summer? Smoothies bring together vitamin packed fruits, veggies, nuts and leafy greens to give our bodies a boost. Gather friends and loved ones and come hang out by one of the pools at our Raleigh apartments with one of the following tasty smoothies.

All recipes are two servings. As a bonus, smoothie mix can be poured into popsicle molds to create frozen treats for later. For the following recipes, just place ingredients in a blender and pulse until smooth.

Berry Blast Smoothie

Fiber rich and refreshing, feel free to add chia seeds or shelled hemp seeds for an omega-3 boost.

-1 cup chopped strawberries
-1 cup blueberries
-1 cup raspberries
-3 tbsp honey
-1 tsp fresh lemon juice
-1/2 cup ice cubes

FruiTea Smoothie

White tea takes a classic fruit smoothie up a notch. Remove the pits and quarter the fruits before you toss into the blender.

-1 plum
-2 peaches
-1 nectarine
-3/4 cup brewed white tea, chilled
-1/2 cup ice cubes
-1 fresh lime
-2-3 tbsp honey

For a protein kick, add whey powder or soft silken tofu to the blender.

Simple Summer Melon

The secret to a sweet, tasty melon smoothie is to only use ripe melons.

-2 cups cubed summer melon (such as watermelon, honeydew or cantaloupe)
-1 cup ice cubes, crushed
-2-3 tbsp powdered sugar, honey or agave

Ground flaxseed or chia seeds give this simple smoothie a shot of omega-3.

Green C Smoothie

All of the vitamin C you need for the day, plus some. Looking for more goodness? Add shelled hemp seeds, ground flaxseed or chia seeds for an omega-3 kick.

-1 cup chopped kale
-2 large kiwis
-1/2 cup fresh orange or tangerine juice
-1/2 cup cilantro sprigs
-1 rib celery
-1/3 cup ice cubes

Chocolate Nutter Buddy Smoothie

-1 large banana
-1 & 1/2 cups chocolate soy or almond milk
-2 tbsp of peanut, cashew or almond butter
